Healthy Chicken and Veggie Fajitas for Cinco de Mayo

Ingredients:

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 1 red bell pepper, thinly sliced

  • 8 small whole wheat tortillas
  • Fresh cilantro, chopped (optional, for garnish)

Instructions:

  1. In a small bowl, mix together the chili powder, ground cumin, paprika, cayenne pepper, salt, and black pepper. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for about 1 minute, until fragrant.
  3. Add the sliced chicken to the skillet and cook until it's no longer pink in the center, about 5-6 minutes.
